Overview
The liquid substance "Protein Condensate" formed by the ordered assembly of proteins will be explained. Proteins form various aggregated structures in vivo and exert higher-order functions. Similarly, in the functional material development with protein, achievement of the protein assembly are important Division is problem. We have found that when anionic and cationic surfactants are added to an aqueous protein solution in a constant amount ratio, a protein condensate is generated as a liquid protein-rich phase separated from the aqueous phase [1]. The formation of protein condensates is not limited to a specific protein, and it has been shown by proteome analysis that more than 700 kinds of proteins can be formed [2]. A protein condensate is a substance in which an electrostatic complex of a protein and a surfactant is assembled hierarchically by hydrophobic interaction. Its inner Department protein closely assembled in orderly regular intervals, a very high protein concentrations (100 to 400 mg / mL) is achieved. It is also possible to control the assembly ordered structure of the protein by the molecular design of the surfactant used. The application of fractional concentration technology of protein from mixture and preparation of enzyme gel material and protein gel material showing excellent mechanical properties due to assembly order of protein [3] are also introduced.
